Grilled Mackerel with Sauce à l'EspagnolIngredients:
Rock salt (sea salt)
Any number of fresh mackerel
3 tablespoons olive oil
2 tablespoons red wine vinegar
Fresh paprika
1/2 small onion, diced
Portuguese parsley (Italian parsley)
Directions:
    1. Liberally salt the mackerel on a plate and let stand for an hour or two.
    2. Grill the fish over hardwood charcoal coals.
    3. In a small bowl, mix olive oil, vinegar, paprika, onion, and parsley.
    4. Top the mackerel meat with sauce. Serve the mackerel with a salad and boiled potatoes.
